Natural:
Slice tomatoes directly in half and season lightly with salt and desired dried herbs. Place tomatoes on a clean sheet pan face up, cover with a cheesecloth (making sure cheesecloth does not touch the tomatoes). Place in direct sunlight for up to 2-3 weeks or until desired texture has been reached.
Fast:
Preheat oven to 200 degrees. Slice tomatoes directly in half. Using a bowl, season tomatoes with salt and desired dried herbs. Lay out tomatoes on a baking sheet face up and place in oven. Let bake for up to 12 hours (may take longer depending on the size of the tomatoes). Check periodically until desired texture is reached.
