Eurofresh Farms Tomato Strawberry Basil Granita

Yield: 10 servings

  • * 1 pound fresh ripe strawberries
  • * 1 pound Eurofresh vine-ripe tomatoes
  • * 2 large fresh basil leaves
  • * 1 ¼ cup granulated sugar
  • * 1 ¼ cup water
  • * 3 tablespoons lemon juice
  • * pinch of salt
  • Instructions:

    Score tomatoes cross wise and dip in boiling water for 10 seconds. The peel should come right off. Boil sugar and water from the recipe and set aside to cool (this is called simple syrup). Cut the leaves off the strawberries. Slice basil in small strips.

    Put all ingredients but the basil into a blender and mix for 30 seconds. Add basil and blend for 10 more seconds.

    Pour mix into a pan or bowl to set in the freezer for 3-4 hours. Shave granita with an ice cream scoop into serving bowls.

    Note: Granita is similar to a sorbet. Bigger ice crystals give it a tasty crunch. It is a refreshing item as a starter or a dessert.
