Ingredients:
* 1 Eurofresh Farms Long English Cucumber
* 1 Eurofresh Farms Tomato
* ½ cup apple cider vinegar
* 2 tbsp honey
* 3 cloves garlic crushed
* Salt and pepper to taste
Instructions:
Peel and thinly slice cucumber into rounds. Place in salad bowl. Dice tomato and add to bowl. In a separate bowl, whisk the vinegar with the next three ingredients to combine. Pour the dressing over the cucumbers and stir to coat. Chill in the refrigerator for 1 hour before serving.
