Roasted Eurofresh Tomato & Dungeness Crab Soup

Yield: 2 quarts

Tomato Soup Ingredients:

  • * 25 each Eurofresh Roma Tomatoes
  • * 8 oz cottonseed oil
  • * ˝ cup garlic cloves
  • * 3 each medium size shallots
  • * small bunch of thyme, tied
  • * salt to taste
  • Preheat over to 350 degrees F. In a roasting pan, combine all ingredients except the salt. Place in oven uncovered for 1 ˝ hours. Remove from oven and discard thyme. Puree in a blender and strain through a strainer. Add salt to taste. Set aside.

     

    Clam Broth Ingredients:

  • * 1 64 oz can of clam broth
  • * 16 oz chicken stock
  • * 3 Eurofresh Roma Tomatoes
  • * 1 cup chopped celery, carrots, and onions
  • * 1 oz tomato paste
  • * 1 oz Pernoid
  • * 6 oz white wine
  • * 1 medium chopped shallot
  • * 3 garlic cloves chopped
  • * salt
  • * small bunch of tied chives, thyme, parsley
  • * 1 each bay leaf
  • * 1 oz cottonseed
  • In a stockpot on medium heat, sweat the chopped vegetables, shallot and garlic in the cottonseed oil until soft. Add tomato paste and cook for three minutes. Then add all other ingredients and allow to simmer for one hour. Remove from heat and strain.

     

    Aioli Ingredients:

  • * 1 cup Mayonnaise
  • * 1 pinch saffron
  • * 1 cup white wine
  • * salt and white pepper
  • Reduce white wine and saffron in a pot on medium heat until almost dry, about ˝ oz. Strain saffron and mix with mayo and season to taste.

     

    Crostini Ingredients:

  • 1 loaf of brioche bread (or your favorite bread)
  • Cut into 1”x 1” rectangles and toast in a 300 degree oven for 6-8 minutes.

     

    Dungeness Crab:

  • 1# Dungeness Crab
  • Warm in a sauté pan on low heat with a dash of olive oil.

    For service, heat both soups separately until they come to a boil. Turn off heat and pour enough clam broth into tomato soup until the soup is slightly thicker then a broth. Check seasoning. Add crostini, crab and aioli for garnish and serve.
