Clam Broth Ingredients:
* 1 64 oz can of clam broth
* 16 oz chicken stock
* 3 Eurofresh Roma Tomatoes
* 1 cup chopped celery, carrots, and onions
* 1 oz tomato paste
* 1 oz Pernoid
* 6 oz white wine
* 1 medium chopped shallot
* 3 garlic cloves chopped
* salt
* small bunch of tied chives, thyme, parsley
* 1 each bay leaf
* 1 oz cottonseed
In a stockpot on medium heat, sweat the chopped vegetables, shallot and garlic in the cottonseed oil until soft. Add tomato paste and cook for three minutes. Then add all other ingredients and allow to simmer for one hour. Remove from heat and strain.
