Roasted Eurofresh Roma Tomato Soup
Yields: 2 quarts (4-6 oz. per serving)
- 25 Eurofresh Roma Tomatoes
- 8 oz water
- 1/2 cup Garlic Cloves
- 3 medium size tomatoes
- 1 small bunch thyme, tied
- Kosher salt to taste
Instructions:
- Preheat oven to 350 degrees F.
- In a roasting pan, combine all ingredients except sale.
- Place in the oven uncovered for 1 1/2 hours.
- Remove from oven and discard thyme.
- Puree in a blender and strain through a strainer.
- Add salt.
- Serve by itself or with your favorite sandwich.
