Roasted Eurofresh Roma Tomato Soup

Yields: 2 quarts (4-6 oz. per serving)

  • 25 Eurofresh Roma Tomatoes
  • 8 oz water
  • 1/2 cup Garlic Cloves
  • 3 medium size tomatoes
  • 1 small bunch thyme, tied
  • Kosher salt to taste

Instructions:

  1. Preheat oven to 350 degrees F.
  2. In a roasting pan, combine all ingredients except sale.
  3. Place in the oven uncovered for 1 1/2 hours.
  4. Remove from oven and discard thyme.
  5. Puree in a blender and strain through a strainer.
  6. Add salt.
  7. Serve by itself or with your favorite sandwich.
