Eurofresh Farms Campari and Cucumber Grilled Cheese

Yields: One serving

  • 2 slices of white bread
  • 2 slices of Colby low-fat cheddar
  • 2 tbsps of "I can't believe it's not butter
  • 3 slices of thin, Eurofresh Campari tomatoes
  • 6 slices of thin Eurofresh cucumbers
  • Salt and pepper to taste
  • 8 oz of low-fat milk

Instructions:

  1. Place one slice of cheese on first slice of bread.
  2. Lay out tomato slices and season with salt and pepper.
  3. Lay cucumber slice over tomatoes and place second layer of cheese over top, followed by 2nd slice of bread.
  4. Heat sauté pan over medium heat.
  5. Melt 1 tbsp of butter substitute and place sandwich in pan.
  6. Gently press with spatula.
  7. Once golden, lift sandwich and place remaining butter substitute in pan, then flip sandwich.
  8. Once 2nd side is golden, remove, cute into quarters and enjoy with a nice glass of milk.
