Eurofresh Farms Campari and Cucumber Grilled Cheese
Yields: One serving
- 2 slices of white bread
- 2 slices of Colby low-fat cheddar
- 2 tbsps of "I can't believe it's not butter
- 3 slices of thin, Eurofresh Campari tomatoes
- 6 slices of thin Eurofresh cucumbers
- Salt and pepper to taste
- 8 oz of low-fat milk
Instructions:
- Place one slice of cheese on first slice of bread.
- Lay out tomato slices and season with salt and pepper.
- Lay cucumber slice over tomatoes and place second layer of cheese over top, followed by 2nd slice of bread.
- Heat sauté pan over medium heat.
- Melt 1 tbsp of butter substitute and place sandwich in pan.
- Gently press with spatula.
- Once golden, lift sandwich and place remaining butter substitute in pan, then flip sandwich.
- Once 2nd side is golden, remove, cute into quarters and enjoy with a nice glass of milk.
