Eurofresh Farms Cucumber Pita Pizza
Yields: 1 serving
- 1 Pita round
- 1 tbsp Olive Oil
- Kosher salt to taste
- 1 ea Eurofresh Campari Tomato, diced
- 1 1/2 tbsp Feta cheese
- 1/4 cup Eurofresh cucumber, diced
- 2 tbsp kalamata olives, halved length-wise
- Black pepper, grind to taste
- 2 tbsp low-fat Italian dressing
Instructions:
- Preheat oven to 375 degrees F.
- Brush Pita bread with olive oil and place on cookie sheet on the middle rack of the oven.
- Toast for 10-12 minutes or until golden brown and crispy, flipping after first 6 minutes.
- Place diced tomatoes, diced cucumbers, halved olives, feta cheese, salt and pepper in a mixing bowl.
- Toss with salad dressing until completely coated.
- Place salad on top of warm, crispy pita.
- Cut into quarters and serve.
- Turn this snack into a great meal by adding grilled chicken.
