Eurofresh Farms Cucumber Pita Pizza

Yields: 1 serving

  • 1 Pita round
  • 1 tbsp Olive Oil
  • Kosher salt to taste
  • 1 ea Eurofresh Campari Tomato, diced
  • 1 1/2 tbsp Feta cheese
  • 1/4 cup Eurofresh cucumber, diced
  • 2 tbsp kalamata olives, halved length-wise
  • Black pepper, grind to taste
  • 2 tbsp low-fat Italian dressing

Instructions:

  1. Preheat oven to 375 degrees F.
  2. Brush Pita bread with olive oil and place on cookie sheet on the middle rack of the oven.
  3. Toast for 10-12 minutes or until golden brown and crispy, flipping after first 6 minutes.
  4. Place diced tomatoes, diced cucumbers, halved olives, feta cheese, salt and pepper in a mixing bowl.
  5. Toss with salad dressing until completely coated.
  6. Place salad on top of warm, crispy pita.
  7. Cut into quarters and serve.
  8. Turn this snack into a great meal by adding grilled chicken.
